This spring, I’m making a concerted effort to try to lose some weight before my niece’s July wedding. As chicken contains protein, I’ll definitely be eating quite a bit of it!

Chicken With Sweet Peppers And Balsamic Vinegar

Grilled Chicken Breast Fillets

Cook Time: 30 minutes

Total Time: 30 minutes

Serves 4

Grilled Chicken, Chicken Breasts, Tyson


  • 4 Tyson grilled & ready chicken breast fillets
  • 4 tablespoons olive oil
  • 4 c. thinly sliced mixed red, yellow, orange and-or green bell peppers
  • 1 medium onion, thinly sliced
  • 4 large garlic cloves, finely chopped
  • 1/4 c. chopped fresh basil
  • 3 Tbl high-quality balsamic vinegar
  • Salt and freshly ground pepper to taste


  1. Season the chicken with salt and pepper.
  2. In a large skillet, heat 2 tablespoons of the oil.
  3. Saute the chicken over medium-high heat, turning once, until golden on both sides, until warmed to desired temperature.
  4. Transfer the chicken to a plate.
  5. Add the remaining 2 tablespoons of oil to the skillet and reduce the heat to medium.
  6. Cook the bell peppers and onion, stirring often, until just softened, about 4 minutes.
  7. Add the garlic and cook, stirring, for 1 minute.
  8. Stir in about half the basil and all the vinegar.
  9. Return the chicken and any accumulated juices to the skillet.
  10. Reduce the heat to medium-low.
  11. Simmer until the chicken is warmed through, about 3 minutes.
  12. Stir in the remaining basil and season to taste with salt and pepper.
