With summer around the corner, many families have already booked their camping spots and are counting down the days to departure.
My family enjoys both camping and boating, which called for some creative meals as often all I was limited to was a propane grill or single burner. If you’re not experienced, trying to be a creative chef over an open probably won’t be a good idea if you bring your best cookware so you might want to bring older pots and pans or perhaps consider buying a camping cookware set. Think ahead about foods that will be easy to cook on a fire.
A rule of them when enjoying the great outdoors is KIS – Keep It Simple. Remember, you’re either going to be in the middle of the woods or anchored out. While it’s possible to cook a rack of BBQ Pork Ribs, French Fried Sweet Potatoes and Sauteed Asparagus Almondine, should you really attempt it? Remember where you are going to be and the mostly primitive utensils you will have at your disposal.
When boating, I always kept several cans of Dinty Moore on hand for those inevitable rainy days when we were at anchor and didn’t want to row or motor into shore.

“Blazing 8″ Chili
- Serving Size: 6
- Total Time: More than 1 hour
- Preparation Time: Under 30 Minutes
- Preparation Method: Stove-Top
- Meal Occasion: Dinner
- Level of Difficulty: Beginner
- 1 pound ground beef
- 1 (15-ounce) can chili beans
- 1 habanero pepper, finely chopped
- 1 medium onion, finely chopped
- 1 (15-ounce) can whole tomatoes
- 2 (8-ounce) cans tomato sauce
- 2 (8-ounce) cans tomato paste
- 3 tablespoons masa (corn flour)
- 3 tablespoons chipotle chile powder
- 10 tablespoons chili powder
- 1 teaspoon garlic powder
- 1 can Hormel® Chili With Beans
- Salt and pepper, to taste
- Ground red pepper (cayenne)
Directions
- Heat skillet over medium heat. Add beef; cook, stirring occasionally, until browned; drain.
- In stockpot, combine beef, chili, beans, tomatoes, tomato sauce and tomato paste; mix well. Cook over medium heat. Stir in onion and habanero.
- Stir masa, chile powder, chili powder and garlic powder into pot. Season with salt, black pepper and cayenne, if desired. Simmer 1 hour or until flavors are developed.
- Serve chili in soup bowl with shredded Cheddar cheese, dollop sour cream and sprinkling sliced green onions.
