St. Patrick’s Day is just around the corner in March, and I like to make Shepard’s Pie with Guinness Stout as it adds a nice flavor and cooks out.

Pierogi are a traditional Polish Christmas dish, especially on Christmas Eve. They’re also known as croquettes or Polish dumplings. I learned to make pirogi from my mom and my aunts, and have passed the cooking skill and holiday tradition down to my youngest daughter.

As the Christmas season approaches, it’s traditional to make Polish Pierogi for Christmas Eve. This year may be an exception for us, as I’m having a difficult time finding our favorite Farmer’s Cheese. Some folks make their pierogi out of cottage cheese, but in our family, it has to be the hard Andrulis farmer’s cheese! Whatever type of cheese or filling you use, here’s a favorite family recipe for authentic easy Pierogi dough.
